Potato fajitas

I made fajitas tonight with an avocado & black olive salad. As there were some dodgy potatoes that needed using Jane suggested roasting them. I like to do them in the oven chip tray with the holes and after they’d been blasted in the microwave I tossed them in some parsley butter (at least 18 months old).

The overall and combined effect was well tasty – in fact we decided that fajitas were even nicer with potatoes than wraps. Well at least it’s still South American.
